Asam Pedas Ikan Kerisi Ala Melaka
Pagi tadi rakan dari Zon Bangsar Pudu call.. cerita itu ini begitu begini..sebelum beliau berkejar ke Melaka untuk memberi ceramah. Itu yang tetiba teringatkan masakan Asam Pedas Melaka.
Masa mula-mula kahwin dulu..Daddy bawa jalan-jalan ke Bandar Melaka. Pakcik beca bawa kami dinner somewhere di Kg Laksamana (?).. Set nasi putih, asam pedas, telur masin dan kobis goreng. Simple aje..tapi fuhhh! Siap keluar peluh bagai...berselera betul kami makan!
Petang tadi..dalam gerimis mengundang..gagah Mummy singgah kedai mamak beli telur ayam kampung (mahal rupanya wehhh! 10 biji = RM7.00).. Daun kesom, bunga kantan..
Balik..keluarkan ikan, cili kering yang dah siap blend..bawang etc. Zup zap zup zasss..7malam siap la Asam Pedas Kerisi, telur dadar kosong, ikan masin dan sayur campur. Kat dalam peti ais ada udang masak tempoyak kacau...
Haaa..dengan nasi panas..cuaca sejuk-sejuk mendung.. Daddy pun sampai ..sedang elok aje la untuk dinner bersama2... Haaa..jemput makan! Cuba la... pasti bertambah nasi seperiuk ;D

garam dan gula (ikut rasa)

sedikit belacan (optional-ada yg x makan belacan)
Mummy tambah 5 bendi muda
Cara-cara
Panaskan minyak, masukkan serai, cili kering, bawang merah, bawang putih, kunyit dan belacan. Tumis hingga naik bau.
Bila sudah naik bau, masukkan air asam jawa, kacau dan biar mendidih.
Kemudian masukkan daun kesum, bunga kantan, kacau dan masukkan air. Biar mendidih.
Masukkan ikan, bendi, garam dan gula. Biar hingga masak ikan dan boleh lah dihidangkan.

Yummy Chocolate Chip Cookies
Suka makan Famous Amos Choc Chips? The kids love it! But.. Mummy selalu bagi alasan kalau diorang suruh beli...first, it's a bit pricey and secondly..it's too sweet for me (and they will eat it in minutes! There gone 100g of Famous Amos with high content of sugars!!)
This recipe is my favourite! The crunchiness..nice chocolaty taste..the sweetness..it's just right!! Emmmm... The best choc chips ever!!! Even Daddy gives his approval..he loves it!! (he doesn't eat d Famous Amos- it's too sweet for him and..he hates chocolate! Heheheh...selamaattt..kurang pesaing utk Mummy ;P )

Bahan-bahan ( untuk 100 biji )
Mummy convert kepada cawan untuk mudah sukat..
450g tepung gandum (Mummy guna 4 cawan)
1 biji telur
250g mentega
115g gula halus (Mummy guna 1/2 cawan)
110g gula perang (1/2 cawan)
100g chocolate chips ( Mummy suka dark choc chip / semi sweet choc chip)
3 sudu besar cocoa powder (Mummy pakai brand Hershey's utk rasa yang baik)
250g gajus (panggang dan cincang halus) / Mummy pakai badam cincang - Mummy buat separuh aje sebab adunan Shu'aib tiada kacang..Mummy guna dalam 1 cawan badam cincang)
1 sudu kecil baking soda
Cara-cara
Pukul mentega dan gula sampai kembang
Masukkan telur dan pukul lagi
Masukkan tepung + baking soda + cocoa powder yg telah diayak, sedikit demi sedikit
Masukkan chocolate chips dan kacau
Mummy bahagi adunan kepada 2 bahagian..
Satu bahagian letak gajus dan satu lagi Mummy biar plain choc chips ajer (Mummy tambah lagi choc chips biar sesuai) dan gaul lagi
Buat bulat kecik-kecik dan tekan dengan garfu atau apa-apa bentuk yang disukai
Bakar dalam oven pada suhu 160C selama 15 minit
Cubalah.. Mmmm..sungguh enak!
Malam ni cuma bakar 2 tray dalam oven kecik.. Esok sambung lagi..
Haa..baki doh hendaklah disimpan dengan baik..balut dengan cling wrap dan masukkan dalam peti sejuk

Hmmm...basically, ni la routine harian during weekend..
Hari ni..mangkit lambat. Semalam (Sabtu) dari jam 3ptg, Abg Shu'aib muntah2..non stop. Dia terbaring sampai malam..cuma bangun semasa muntah. Dann..dia lalu telan air masak semata....tapi lepas 5 minit, dijamin keluar semula sampai nak terkeluar isi perut! Sehingga ke pagi..begini la keadaannya. Sampai Daddy letak baldi sebelah tempat pembaringan Shu'aib.
Malam..dia cirit..nasib baik sekali aje.
Tapi makk aiiii.....BUSUKNYAAA!
Daddy siap suruh bukak semua pintu yg ada..pasang kipas (walau pun bilik ber-aircond)..dan kena sembur minyak wangiiii...huh! Kembang kempis hidung Mummy / Daddy yg dah sedia kembang ni...
Breakfast..cuma makan roti dan nutella. Daddy berkejar ke kedai mamak..beli santan (stok dah abis la pulak)... Mummy prepare utk masak nasi lemak. Shu'aib yg order dari semalam.. Anak2 Mummy dah pandai meng-order! Jangannn...siap pandai cakap..contohnya dinner semalammm: "Mummy, kuah mee kari ni banyak minyak la ari ni" Huarghhh! Banyak la ko punye kompelen Dik! Mummy ni lesen 'L' bab masak memasak ni! Huhuhu
Tapi..kalau sambal tumis..Mummy memang terror. Superb! Heheheh..masuk lif tekan sendirik!
Jadi... jam 11 tadi..siap la Nasi Lemak, telur mata dan ayam goreng. Adik mintak lemang dan rendang jugak! Okeh..siappp!

Ops! Hari malang sedunia..
Mummy! Apa bau niiiii?!
Opsss!!! Cooking chocolate Mummy hanguss! Heheheh..padan muka!
Konon nak cepat.. lepas racik cooking choc.. Terus letak dlm container transparent microwave tu (ala..yg buat jual tau foo fah tu)..pas tu.. on microwave. Lepas tu prepare lak bahan2 utk buat mee rebus! Tak sampai 3 minit...
(*sniff sniff..budak berdua tu menghidu kat area dapur Mummy)
Mummy!!! Ada bau terbakar!
Hah! Ambik ko!
Dah jadi macam lava yang mengalir kat dalam microwave tuh! Container tu pun dah abis melt bontotnya..kuang kuang kuang!
Itulah pasal kalau KONON hebat sangat macam SUPER MOM!
Balik pejabat..sementara nak buat mee rebus utk dinner.. prepare topping utk buat choc cake! Wassalam la topping kek malam ni! Semua dah masuk bakul sampah! Malas pulak nak buat versi masak atas dapur pakai air, serbuk koko, gula dan susu tu!!!

Siap aje mee rebus, terus bersilat buat kek choc pula.. Ececeeh! Berangan nak jadi Nigilla. Terbayang2 episod yang dia campak semua bahan2 buat kek..masuk dlm blender.. zreetttt..tuang dalam loyang...jilat jilat spatula dan blender tu dulu..emmm SEDAPPP...pas tu baru masuk oven.. Tadaaaa! Dah siap! Dapat dibayangkan tak?

Ingredients
(Mummy buat separuh adunan aje -dapat 5 cuppies L size)
200 Grams Plain flour
200 Grams caster sugar
1 Teaspoon baking powder
1 Teaspoon bicarbonate of soda
40 Grams Cocoa powder
175 Grams Unsalted butter Soft (malas nak tunggu butter pd suhu bilik- Mummy ganti dengan minyak masak aje)
2 Large Eggs
2 Teaspoon Vanilla extract
150 Millilitres Sour cream (Mummy tak der.. so Mummy ganti dengan Buttermilk: 1/2 cawan susu + 1/2 sudu besar cuka, kacau dan tunggu 10 min sblm digunakan mengikut kuantiti yang dikehendaki
Sebenarnya..option yg lebih baik utk menggantikan sour cream adalah plain yogurt..kalau tak de jugak baru guna buttermilk)
For the icing
(ini Mummy tak buat..konon nak pakai cooking choc + sikit butter..namun cooking choc sudah hangus terbakar!)
75 Grams Unsalted butter
175 Grams Dark chocolate broken into small pieces
300 Grams Icing sugar
1 Tablespoon Golden syrup
125 Millilitres Sour cream
1 Teaspoon Vanilla extract
1 Packet Sugar Flowers (optional)
Method
Take everything out of the fridge so that all the ingredients can come to room temperature.
Preheat the oven to gas mark 4/180°C and line and butter two 20cm sandwich tins with removable bases

Now all you have to do is put all the cake ingredients - flour, sugar, baking powder and bicarb, cocoa, butter, eggs, vanilla and sour cream - into a FOOD PROCESSOR / BLENDER and process until you have a smooth, thick batter (Mummy guna cara ini.. senang ko! Campak aje semua sekali..zreettt..dah siap)
If you want to go the long way around, just mix the flour, sugar and leavening agents in a large bowl and beat in the soft butter until you have a combined and creamy mixture.
Now whisk together the cocoa, sour cream, vanilla and eggs and beat this into your bowl of mixture.
Divide this batter, using a rubber spatula to help you scrape and spread, into the prepared tins and bake until a cake tester, or a thin skewer, comes out clean, which should be about 35 minutes, but it is wise to start checking at 25.

Also, it might make sense to switch the two cakes around in the oven halfway through cooking time.
Remove the cakes, in their tins, to a wire rack and let cool for 10 minutes before turning out of their tins. Don't worry about any cracks as they will easily be covered by the icing later.
To make this icing,
melt the butter and chocolate in a good-sized bowl either in the microwave or suspended over a pan of simmering water.
Go slowly either way: you don't want any burning or seizing.
While the chocolate and butter are cooling a little, sieve the icing sugar into another bowl. Or, easier still, put the icing sugar into the food processor and blitz. This is by far and away the least tedious way of removing lumps.
Add the golden syrup to the cooled chocolate mixture, followed by the sour cream and vanilla and then when all this is combined whisk in the sieved icing sugar. Or just pour this mixture down the funnel of the food processor on to the icing sugar, with the motor running.
When you've done, you may need to add a little boiling water - say a teaspoon or so - or indeed some more icing sugar: it depends on whether you need the icing to be runnier or thicker; or indeed it may be right as it is. It should be liquid enough to coat easily, but thick enough not to drip off.
Choose your cake stand or plate and cut out four strips of baking parchment to form a square outline on it (this stops the icing running on to the plate). Then sit one of the cakes, uppermost (ie slightly domed) side down.
Spoon about a third of the icing on to the centre of the cake half and spread with a knife or spatula until you cover the top of it evenly. Sit the other cake on top, normal way up, pressing gently to sandwich the two together.
Spoon another third of the icing on to the top of the cake and spread it in a swirly, textured way (though you can go for a smooth finish if you prefer, and have the patience). Spread the sides of the cake with the remaining icing and leave a few minutes till set, then carefully pull away the paper strips.
I love to dot the top of this with sugar pansies - and you must admit, they do look enchanting - but there really is no need to make a shopping expedition out of it. Anything, or indeed nothing, will do.

Balik pejabat..sementara nak buat mee rebus utk dinner.. prepare topping utk buat choc cake! Wassalam la topping kek malam ni! Semua dah masuk bakul sampah! Malas pulak nak buat versi masak atas dapur pakai air, serbuk koko, gula dan susu tu!!!
Tapi tak per..mood buat kek choc masih membuak2..
Siap aje mee rebus, terus bersilat buat kek choc pula.. Ececeeh! Berangan nak jadi Nigilla. Terbayang2 episod yang dia campak semua bahan2 buat kek..masuk dlm blender.. zreetttt..tuang dalam loyang...jilat jilat spatula dan blender tu dulu..emmm SEDAPPP...pas tu baru masuk oven.. Tadaaaa! Dah siap! Dapat dibayangkan tak?

Ingredients
(Mummy buat separuh adunan aje -dapat 5 cuppies L size)
200 Grams Plain flour
200 Grams caster sugar
1 Teaspoon baking powder
1 Teaspoon bicarbonate of soda
40 Grams Cocoa powder
175 Grams Unsalted butter Soft (malas nak tunggu butter pd suhu bilik- Mummy ganti dengan minyak masak aje)
2 Large Eggs
2 Teaspoon Vanilla extract
150 Millilitres Sour cream (Mummy tak der.. so Mummy ganti dengan Buttermilk: 1/2 cawan susu + 1/2 sudu besar cuka, kacau dan tunggu 10 min sblm digunakan mengikut kuantiti yang dikehendaki
Sebenarnya..option yg lebih baik utk menggantikan sour cream adalah plain yogurt..kalau tak de jugak baru guna buttermilk)
For the icing
(ini Mummy tak buat..konon nak pakai cooking choc + sikit butter..namun cooking choc sudah hangus terbakar!)
75 Grams Unsalted butter
175 Grams Dark chocolate broken into small pieces
300 Grams Icing sugar
1 Tablespoon Golden syrup
125 Millilitres Sour cream
1 Teaspoon Vanilla extract
1 Packet Sugar Flowers (optional)
Method
Take everything out of the fridge so that all the ingredients can come to room temperature.
Preheat the oven to gas mark 4/180°C and line and butter two 20cm sandwich tins with removable bases

Now all you have to do is put all the cake ingredients - flour, sugar, baking powder and bicarb, cocoa, butter, eggs, vanilla and sour cream - into a FOOD PROCESSOR / BLENDER and process until you have a smooth, thick batter (Mummy guna cara ini.. senang ko! Campak aje semua sekali..zreettt..dah siap)
If you want to go the long way around, just mix the flour, sugar and leavening agents in a large bowl and beat in the soft butter until you have a combined and creamy mixture.
Now whisk together the cocoa, sour cream, vanilla and eggs and beat this into your bowl of mixture.
Divide this batter, using a rubber spatula to help you scrape and spread, into the prepared tins and bake until a cake tester, or a thin skewer, comes out clean, which should be about 35 minutes, but it is wise to start checking at 25.

Also, it might make sense to switch the two cakes around in the oven halfway through cooking time.
Remove the cakes, in their tins, to a wire rack and let cool for 10 minutes before turning out of their tins. Don't worry about any cracks as they will easily be covered by the icing later.
To make this icing,
melt the butter and chocolate in a good-sized bowl either in the microwave or suspended over a pan of simmering water.
Go slowly either way: you don't want any burning or seizing.
While the chocolate and butter are cooling a little, sieve the icing sugar into another bowl. Or, easier still, put the icing sugar into the food processor and blitz. This is by far and away the least tedious way of removing lumps.
Add the golden syrup to the cooled chocolate mixture, followed by the sour cream and vanilla and then when all this is combined whisk in the sieved icing sugar. Or just pour this mixture down the funnel of the food processor on to the icing sugar, with the motor running.
When you've done, you may need to add a little boiling water - say a teaspoon or so - or indeed some more icing sugar: it depends on whether you need the icing to be runnier or thicker; or indeed it may be right as it is. It should be liquid enough to coat easily, but thick enough not to drip off.
Choose your cake stand or plate and cut out four strips of baking parchment to form a square outline on it (this stops the icing running on to the plate). Then sit one of the cakes, uppermost (ie slightly domed) side down.
Spoon about a third of the icing on to the centre of the cake half and spread with a knife or spatula until you cover the top of it evenly. Sit the other cake on top, normal way up, pressing gently to sandwich the two together.
Spoon another third of the icing on to the top of the cake and spread it in a swirly, textured way (though you can go for a smooth finish if you prefer, and have the patience). Spread the sides of the cake with the remaining icing and leave a few minutes till set, then carefully pull away the paper strips.
I love to dot the top of this with sugar pansies - and you must admit, they do look enchanting - but there really is no need to make a shopping expedition out of it. Anything, or indeed nothing, will do.

Ikan Masak Lemak Cikgu Jawahir
Dulu..masa mak sihat, ini antara favourite dish anak2.
"Opahh! Esok masak lemak kuning ya!"
Bila Opah suap.. Shu'aib mesti cakap:
"Opah..you're the best cook in the whole universe!!"
Haa..baik punya memujii! Tapi memang diorang suka..tak kisah sama ada isinya ikan mahu pun ayam.
Bahan:
Ikan - digoreng terlebih dahulu dengan garam kunyit
Bawang besar - dihiris
Bawang putih - dihiris
Halia - dihiris seperti batang mancis
Kunyit (hidup - ditumbuk atau serbuk kunyit juga ok)
Serai - dititik
Daun limau purut
Santan
Garam
1 asam keping (optional)
Caranya:
Tumis bawang, halia, serai..hingga naik bau.
Mummy tambah cili padi seketul2.. dalam 5-7 biji (sebab Mummy boleh gentel masa makan ngan nasi nanti- baru ada kick)
Masukkan santan, kunyit, asam keping jika mahu....biar menggelegak.
Masukkan ikan yang telah digoreng, perisakan dengan garam.
Akhir sekali..masukkan daun limau purut.
Dah siapp.. Cuba la
